Why does my dog get disstressed when the smoke alarm bleeps?

Probably because of the pitch of the alarm ! They're designed to be loud and shrill - to wake people up in the event of a fire - cats and dogs have a different hearing range to us. Dogs especially are more sensitive to high-pitched sounds (dog whistles are all but inaudible to humans because of the pitch of the note !)
