Monounsaturated fatty acids (MUFA) have one double bond in the fatty acid chain and the remaining carbon atoms are single bonded.

A 3.5 ounce serving of linoleic sunflower seed kernels contains the following:

  • Fat: 51.46g
  • Saturated fat: 4.455g
  • Monounsaturated fat: 18.52 grams
  • Polyunsaturated fat: 23.13

However, please keep in mind that there are 3 commercially used types of seeds, each with its own slightly different levels of fat -

  • Linoleic (most common)
  • High oleic
  • NuSun
