What are the symptoms of a bad heat sensor on a 2001 4.3 vortech. i am having a fluation with my temperature gauge.?

My temperature gauge will go up to 280 and in a few minutes it will go down to 250 and stay there. i have a 2001 sio w/4.3 vortech. Is this a sign that the heat sensor may be bad?
