Hamsters, especially syrian hamsters will be grumpy if when woken, so it's usually best to keep your fingers away from them before they've had a time to collect their bearings... As for biting, I can make the following recommendations: i) Make sure your hands have been washed thoroughly with soap, otherwise he may be able to smell food and confuse them with food, ii) Always handle your hamster firmly, but gently. He may bite if he feels unsafe. Handle him every day and make sure he feels very secure in your hands. iii) If he does bite, don't drop or squeeze him, just give him a very light tap on the nose with the finger that he bit STRAIGHT away. They don't like this, and he'll know what he's done wrong. Don't ever tap hard, or after the event, it has to be straight away if he's going to learn! But do it gently!!!! iv) Get him to see the benefits of being handled - rub him gently to mimic grooming (he should love that) and keep some sunflower seeds or no sugar peanut butter handy so he associates you with being fed really nice things, but be careful that he doesn't think your hands are food, so wait until he's learnt not to bite before doing this.
