Unfortunately, yes. The heat used in dehydration destroys Vitamins A and C (particularly important if you are dehydrating fruit). A sulfite treatment reduces this, but destroys thiamin. Low temperature and humidity during storage can reduce loss, but not eliminate it. Fresh is better.
