'Cheval' (plural chevaux) is the generic name for any horse regardless of its gender. A male horse is 'un étalon', and a female horse is 'une jument'. Of course, when using these, you want to signal specifically the sex of the animal. For example you would say that 'la jument a eu deux poulains' (the mare had two colts), and 'j'aime faire du cheval' (I like to go horse-riding) even if the horse you are riding is a mare.
