Milk is heat treated by pasteurisation (72°C for 15 seconds) or sterilised (142°C for 2-3 seconds).

This kills off pathogenic organisms (that will make you sick) and pasteurisation will kill some of the spoilage bacteria. Sterilisation kills most of the spoilage organisms in the milk.

After processing the milk is packed into special containers and stored. Pasteurised milk is stored in a refrigerator and must remain cold to prevent spoilage.

Sterilised milk is packed into sealed, light tight containers and stored at ambient temperature.
