If it is one of the biggies then yes. Visa, MasterCard and American Express work all over the world, but only if you let your bank know you are going overseas on holiday before you go.

Most cards have something on them called "fraud protect" if you do not let your bank know you are going on holiday and they see a transaction in a foreign city they will not honour the sale.
