How long does sweet corn stay sweet?

Corn starts to lose freshness very quickly. Sugars in the corn start turning to starch within hours of picking and can sour/ferment in warm conditions within 24/36 hours. Even in cool conditions sweet corn is not as good 3 days after picking.
