What if your dog just ate a pretty big dried out old starfish body will she be okay?

Yes. Most dogs will be fine. Use a tblespn of hydrogen peroxide to aid in vomiting if it was recent and you are really concerned, otherwise, the dog will be ok. The dog will most likely have some diarrhea due to the roughness of the outer coating and will drink some extra water, but will be ok. My dog, a Chihuahua, tries to eat everything, and ate basically all 5 legs off of a good, decent size dried starfish while I was out, and only had some diarrhea hours later. Mind you, my dog also tried to eat those heat pads (the ones you wrap and last for 8 hrs and throw away, and managed to survive too--though not advised for animals to eat!), but most dogs will be ok.Everywhere I have looked at the same problem with other dogs and such online and people have had no problems either. If you are really concerned though, just take your dog to the vet.
