What does it mean when a British person says someone has a lot of bottles?

It is 'a lot of bottle', not 'bottles' - singular.

Funnily enough, it doesn't actually mean that someone is holding a lot of beer bottles.

It is used to describe courage, someone brave.

For example: 'You have a lot of bottle swearing at that police officer!'
