To keep sunflowers producing, leave the heads on the plants until the seeds are fully mature and the petals have dropped. Once they are dry, you can harvest the heads for seeds or leave them for birds. If you want to encourage continuous blooming, deadhead the flowers by removing wilted blooms to promote new growth and prevent the plant from focusing energy on seed production. Additionally, ensure the plants receive adequate water and nutrients to support ongoing flowering.
