Concerning a walking stick tree why are some branches twisty and some straight and how do you correct it?

If you mean a Corylus contorta then the straight shoots are coming from the rootstock and should be torn out to allow the contorted shoots to survive . If you dont the rootstock will take over and kill the twisted part.
