How do you learn secondary profecions in World of Warcraft?

Press the "K" button to go to your skill menu; you should see a small round sign to the left of the green bar indicating your skill progression.

If you left-click this, a menu pops up asking if you want to unlearn this skill. If you proceed, the skill will be gone and you are able to learn a new one.
