A four-chambered stomach to better rely on just grass and hay throughout its life (all thanks to the rumen, a large fermentation vat that, along with millions of microflora that live in there, help break down the otherwise undigestible parts of plants like cellulose and lignin), Large body size to encompass the rumen, horns and/or a thick skull to better fend off predators with or compete for dominance (and breeding rights for bulls) with, strong anti-predator drive (some more than others) to protect themselves and their calves, strong herd-bound instinct making them easier to work with and able to keep together and keep a better eye out for threats, etc.
