Hi Used to have a VW many years ago and really enjoyed taking the engine in and out, and working on it in general and found it quite easy.Untill I can find my VW manual which I still have somewere, as far as I can recall,I think there is a panel in floor that comes out behind the rear seat, (drivers side ?) that enables you to get at the bolts though I think some under the car work is needed to get the wireing undone, quite a simple job really. Hope this is of some help, if you require further please let me know and I will search for my manual. Remove your battery cables before doing anything. If you haven't taken it out yet, the starter is on the passenger side, there are two bolts to remove or replace. (Taking your wheel off really helps to get at them also.) One is a dual use, its also your motor mount. The nut is inside the engine bay behind the fan. I'm not sure when they changed the head of that bolt, the later models have a half moon shape or a half head that slides right next to the starter so the bolt doesn't rotate when you take the nut off. My '72 and '75 Supers have it. Just remember to slide the half head in the right way as the head will bind against the starter and not tighten the right way. You just need someone to hold their finger on the bolt head until you get the nut started. The earlier years are just regular head ones so you have to hold a wrench on the bolt so it doesn't turn. The other bolt just bolts into the block. Just remember to mark the wires when taking them off.
