In the US, mechanical peanut harvesting is frequently a two-step process. When the peanuts are ready, you take a digger into the field to uproot and invert them to dry down. (See "Peanut digger" link below.) Then when the plants have dried down, you use a peanut combine to get the peanuts separated from the rest of the plant and the roots.
