How often should a turkey egg be turned during incubation?

If you are turning the eggs by hand you need to do odd numbers so that the embryo does not end up in the same place every night. So either 3 turns per day or 5 turns per day. 7 turns would be good but now you are opening the incubator to much and letting the heat and humidity out. So if you have the time, spread out 5 turns over the course of the day.

In an automatic incubator the machine will turn the eggs between every hour or 2 hours day and night depending on the model.
