How do you uprate the gvw on a 2.8 ldv maxus to a 3.5?

Easy way is to swap the springs, axles and brakes from a 3.5t crewcab XHR. Then you need to get it uprated by VOSA. First call would be to go to local VOSA office and ask for full legalities.
