Why does the high side line of my AC get hot?

It is supposed to. The freon gas returned in the low side has been changed to a high pressure liguid by the compressor. That process made it hot. Oddly enought, when that hot liguid is sprayed thru small outlets into the evaporator coil, it turns cold.
