Why are tables made out of Softwood?

It is used in quality furniture, primarily as secondary wood. Hard wood is from trees that lose its leaves in the autumn. Soft wood comes from trees that are evergreen.

Many "soft woods" are harder than some "hardwoods". Balsa, a hardwood, is really quite soft. Eastern hard pine is much harder than balsa.

Nicer furniture is made from hard woods as they finish better, hold up longer, and are more attractive. Hardwoods take stains and dyes better than softwoods.
