First you need to consider the purposes to which you will put kitchen knives. If your cooking mostly consists of cutting and chopping meat and vegetables, a good all-purpose chef's, (or kitchen) knife will serve most purposes.
If you work with meats a lot you might also need boning and carving knives; if you bake bread or buy it unsliced, you'll be grateful to have a serrated bread knife on hand.
So, while you're at the knife store, pick up a catalogue to take home. When you're later working in the kitchen take note of the various jobs you do and check out the catalogue for tools which will make your work easier. You can then discuss your needs with staff in the store from a more informed basis than if you just wander in with an idea of getting a lot of knives and then learning to use them.
Remember, the ultimate aim in buying kitchen knives is to make life easier for you in your kitchen - not to make the manufacturers richer. Buying only a few basic knives means that as you are spending less money than if you bought a whole range, many of which you might never use, you can spend a little more on the knives you do buy and go for better quality.
