Why don't McDonald's french fries rot?

Contrary to popular belief, it is not because of the alleged chemicals and toxins McDonald's shoves into their foods. It is not something spectacular that McDonald's created.

The real reason is because of the low moisture content in the food. Since McDonald's food is high fat, that leads to low moisture content. When there is low moisture content, the meal cannot decompose properly.
