Unfortunately there's no easy way to restore anything that's deleted, at least without a lot of technical knowledge. If your phone is not working properly due to the things you deleted from it then you may just have to factory reset the phone -- which deletes all your custom settings from the phone and restores it to 'like new' condition, as if you had just purchased it from the store. This will get your phone functional at least.

Before you begin the factory reset process, make sure to remove any SIM and SD cards if they exist.

You can also use a tool called FExplorer (file explorer) to browse the contents of your phone and save some data before doing the factory reset. (See:http://gosymbian.com/fexplorer_new.php)

You can then format the device by typing * + 3 + Call + Power On. Before the device is reset, you'll need to provide the lock code. The default lock code is 12345.

If that doesn't work you can format the device by typing *#7370# in standby mode. Same lock code as above.

Some Nokia Phones can be reset via the menu system. Via Menu > Settings > Phone Management > Factory Settings > Delete Data and Restore.
