All four [4] legged, warm blooded animals have what is commonly referred to as a hock. This is lower most portion of the rear and some times the front legs. These can most often thought of as extremely poor quality and inexpensive cuts of meats and a most often either pickled or smoked after being brine soaked. They are then either eaten cold or heated in some fashion prior to serving with sour kraut or slaw.
