How should the food manager handle a situation in which he sees a worker stop busing tables and return to the food area without washing her hands first?

A food manager should take every opportunity to teach about handwashing as the first prevention against contamination of foods. He should immediately pull the worker off the food area, take the person aside and instruct her about washing hands after doing cleanup work and before returning to a food area.
