Are carrots good for bearded dragons?

Of course. Why wouldn't it be? Cat food is alright on the weekends and ONLY weekends.

Edit: WHY on earth have you suggested feeding CAT FOOD to a reptile - since WHEN would a Bearded Dragon find cat food to eat in its NATURAL environment ! Stick to recognised natural food - or make sure you have good access to a local specialist VET - you're gonna need one !!
