Well, that is an interesting question. However, why would being baked matter? Is raw gingerbread more prone to life than cooked gingerbread? I think that the story had him come to life afterward, because in the Gingerbread man world, being cooked means that you are "done" ... kind of like Pinocchio. He didn't come to life as a tree or as an uncarved piece of wood... only after he was carved and "finished."

In the realm of fiction, a lot of strange things happen. A woman/witch can build a life-sized house out of gingerbread for instance, and live there in the woods for years. A girl's brothers can turn into birds. Straw can be spun into gold. A prince can climb up a tower with no doors to visit a girl who has never been outside in a time of no indoor Plumbing, and not find her disgusting. A Prince's eyes that were pecked out by birds can be restored purely by tears. A girl can remain asleep for 100 years and not die or rot. ... so, gingerbread coming to life after being baked... I don't know. Seems like one of the least hard to believe... especially when the lifespan is so short. Hop out of the oven, run away from the only person who could protect you, and then trust a FOX for no reason... my goodness. Trusting foxes and wolves... you have to wonder if there is a little gingerbread BRAIN in there at all sometimes...
