The lobster skin is also its skeleton... called an exoskeleton. It is made of a tough protein called chitin, similar in function to hair, fingernails, claws, hooves, beaks, etc. Usually lobsters further harden it using a process called biomineralization.
Because it isn't flexible, the lobster needs to shed it completely (moult) in order to grow.
