Where is the thermostat located on a 1990 VW cabriolet?

I'm actually in the middle of replacing mine. From what the mechanic told me, I had thought it would be there when I removed the bottom, large radiator hose from the engine beneath the front of the car. It's not right there - I'm not very car savvy - though if you ALSO remove the black metal part connecting between that hose and the engine, I'm told it IS there.

The thermostat on all Cabriolets is located inside the thermostat housing, which is attached to the water pump:. The lower radiator hose attaches to the thermostat housing.
