Why would you not expect amylase to digest protein?

It acts on glycosidic bonds found in carbohydrates, not on the peptide bonds that link amino acids in proteins. Therefore, amylase lacks the appropriate structure and active site to interact with and digest proteins, making it ineffective for that purpose.
