To re-season a wok properly for optimal cooking performance, first scrub it with hot, soapy water to remove any old seasoning. Dry it thoroughly, then heat it over medium-high heat until it's very hot. Add a thin layer of oil and swirl it around to coat the entire surface. Continue heating the wok until the oil starts to smoke, then turn off the heat and let it cool. Wipe out any excess oil and your wok is ready to use for cooking.
