A macchiato is espresso (one or two shots) that is "marked" with frothed up foamy milk. The purpose of the foam, for some, is to neutralize the bitter taste of a lower quality espresso. You froth the milk by bringing the tip of the steam wand right to the surface of the milk. The more foam that builds, the more you pull the steam wand away from the milk. When you've reached the desired amount, pull a shot or two of espresso into a cup and then gently guide the foam over top of it with a large spoon. Good luck!
