There are different variations of the spices, depending on the regional recipe you're using. The traditional Middle Eastern mix contains: black pepper, cinnamon, allspice, cardamom, cloves, corriander, and nutmeg. While the traditional Lebanese mix contains: allspice, black pepper, ginger cinnamon, cloves, nutmeg, and fenugreek. Regardless of the region you're making the spice mix for, it is made by combining equal amounts of each spice together. (For smaller quantities, you could use 1/4 teaspoon of each, or for larger quantities to keep the seasoning on-hand, you could use 1 cup of each.)
