I can't say specifically why 120 days but it is particularly shorter than other cells because it becomes worn down fast from so much work. It does not have a nucleus to help it reproduce on its own, nor mitochondria that normally serves as an energy source for cells or other organelles to help maintain it. It is eventually broken down by the body and new RBCs are rebuilt in the bone marrow.
