How long after taking diazepam for two days is it safe to drink alcohol?

If you were taking it in the prescribed dosage, yes. If you were loading up on it, it would be a good idea to go easy on booze for a couple more days (an Excellent idea anyway). Diazepam has active metabolites that hang around for weeks.
