Why did the Ancient Egyptians put spells on there burial coffins?

To ensure the vessel was available for the spirit to mould itself after in the afterlife. The god of Mumification, Anubis, was called upon in these rituals to help preserve the body, and to keep the ritual jars, containing the Heart and other organs, safe and guarded so they could be used in the final judgement.
