Why does max freak out when she sees herself as an eraser in the book Maximum Ride school's out forever?

She is afraid of being her own enemy. Also Jeb created Ari( only five years or so old) into a monster eraser. Who would do that to their own son? I mean he DIES prematurely instead of an old man like he should have if not tested on
