What happens to a car with blown shock absorbers?

If you hit a bump, the car will keep swaying and bucking for several seconds. For careful driving it doesn't matter much, but if you should ever need to swerve hard, the poorer handling will make it harder to control the vehicle, maybe even causing it to roll.
