The official rulings for Scion of the Ur-Dragon state that its ability can be activated multiple times in a turn, allowing you to search for different Dragon cards each time. Additionally, the chosen Dragon card will retain any modifications made to it, such as 1/1 counters or equipment, even if it changes back into Scion of the Ur-Dragon.
