Why potato sweels after putting it in water for 2-3days?

When a potato is submerged in water for 2-3 days, it absorbs water through osmosis, leading to swelling. The high concentration of solutes inside the potato cells causes water to move in, resulting in an increase in cell turgor pressure. This process can also cause the potato to become softer in texture as the water disrupts the cell walls. Additionally, if the potato is cut or damaged, the absorption can be more pronounced.
