How do you sign out of aim?

That depends on how you are connected to AIM. If you are using the actual AOL Instant Messenger program then you would simply exit out of the program and indicate you wish to disconnect, not just minimize the program.

For the web client, usually clicking on your status and choosing "go offline" or "logout" works.

As for other clients, it would depend on the client in question.
