What is the principle on which carburettor works?

The basic principle is the carb holds gas in a float bowl with an exit needle to the venturi. When this exit needle is opened by pressing the accelarator, the air valve at top of venturi also opens, thus mixing air and gas in the venturi and admitting the mixture into the intake manifold.
