Why do sunflowers grow on the side of highways?

I have noticed that wheat grows beneath the boughs of roadside trees here in the UK. It must have come from birds eating an ear of corn and spilling half it's contents. The same may well be happening with sunflower seeds below utility poles beside your highways.
