It depends on a LOT of factors: how long you have lived together, how much she earned, etc. Even if she were to meet the standards for a qualifying relative, you would only get an extra exemption for her: this means that you would have another standard deduction from your taxable income for the 2010 earnings year.
Even if she can be claimed, this does not mean you can file as married, nor would claiming her as a dependent make you eligible for head of household status. If there are children involved, they could make you eligible for that status.
