The two different coloured stripes signified the mix of their practice: they were both barbers and surgeons (and dentists as well), who besides cutting hair and beards also did bloodletting, leeching, pulling teeth, fire cupping (using a hot glass to withdraw blood), and surgery. The red was to represent the surgery (blood) while the white was the barbering.
