Because of the shape. When the chicken or turkey has been plucked, the shape of the naked tail is like a large, broad nose with flaring nostrils. Why people have decided it resembles the preacher's nose in particular, I don't know, but I suspect it's because they spend so many hours with nowhere to look during long sermons but up the preacher's nose. My mother always ate it and said she liked it, but I think it was because, in our large family, no one else wanted it and she left the better parts for the rest of us.
