Science uses the scientific method which is:
1) you observe something and measure it
2) you come up with a possible explanation for what you have observed
3) you think about an experiment that will test the validity of your explanation
4) you set up and perform this experiment and record the results.
5) if the results are good (go to 6) if the results are bad (go to 2)
6) you write up your work and submit it for pier review - and it is published
7) others then try and disprove your work by repeating your experiments, designing others to test the theory or by coming up with alternative theories and testing these with experiments too.
As you can see science therefore explains things and advances on the basis of open and tested objective evidence. The best theories (eg Einstein's theory of general relativity) stand the test of time but are STILL the subject of scientists testing them.
