A Hungi is a traditional Māori method of cooking that involves an underground oven. To make one, dig a pit in the ground and line it with heated stones. Place your food, such as meat and vegetables, wrapped in leaves or cloth, on top of the stones, then cover it with more leaves and soil to trap the heat. After several hours, uncover the pit to reveal perfectly cooked, tender food infused with earthy flavors.
