What modern occupation do you think comes closest to matching the duties and ideals fo the Knights of the Round Table?

Military Officer, particularly Marines. The Knights were leaders and land holders. They led armies into battle and lived by a strict code of honor. They were incredibly loyal and protected the kingdom at any cost. That screams "Marine" to me.
